There were two things that stood out for me in this passage;

"But if anyone is unlean and eats the meat from the fellowship offering that belongs to the Lord, he must be cut off from his people." v20

Brought to mind the passage about anyone who partakes of the Lord's supper without first examining himself and "coming clean" on his need to recognize the Lord's sacrifice for sin eats and drinks wrath upon himself. 1 Cor 11:29

Also, I was just struck by the overall idea of how it is now our LIVES that we bring as a fellowship and thank offering. Or do we? The price has been paid, now are ALL on the altar must be laid. In some ways it looks like Christ's sacrifice made things easier for us, no more of these sacrifices, He paid it once for all. But on the other hand, He demands our ENTIRE lives as a sacrifice. Do we see that? I see it today... often the glass is so cloudy that I forget.

those are some really great insights and thoughts. Not just the parts of the animal, but our whole selves. Love that.
And that's waaay more than I was able to glean out of this passage (lol)
